Restaurant Manager – Sailor Galley and Rum Bar

This is an exciting time to join our locally owned hospitality group as we continue to grow and develop our two Mount Maunganui venues — Sailor Galley & Rum Bar & Brew Co — both located just 100 metres apart in the heart of Mount Mainstreet.

We're now looking for an experienced and motivated Restaurant Manager to lead the team at Sailor Galley and Rum Bar, our lively coastal restaurant and cocktail bar. Sailor is known for its upbeat atmosphere, rum-focused bar, and high-quality dining experience that captures the spirit of Mount life — relaxed, social, and fun.

As Restaurant Manager, you'll take ownership of the day-to-day operations of the venue — ensuring smooth service, consistent quality, and a positive, professional team culture. You'll lead from the front, drive performance, and deliver exceptional guest experiences every day.


Key Responsibilities:

* Oversee daily restaurant and bar operations

* Lead, train, and develop a high-performing front-of-house team

* Maintain excellent standards of service, presentation, and efficiency

* Manage rosters, stock control, ordering, and cost management

* Work closely with the Head Chef and Group Management on menu and service development

* Drive sales and profitability through smart planning and goal setting

* Ensure compliance with all licensing, food safety, and health & safety regulations

* Build strong relationships with regular customers, suppliers, and staff


About you:

* Experience in a management role within a busy restaurant or bar

* A strong understanding of restaurant operations and team leadership

* Confident in managing busy services while keeping calm under pressure

* Great communication skills and a hands-on leadership style

* A genuine passion for food, cocktails, and creating memorable guest experiences

* Proven ability with stock control, budgets, and cost management

* Hold a valid LCQ and Duty Manager's Certificate (or be eligible to obtain)

* Flexible to work evenings and weekends as required
