Food and Beverage Manager

About the role

In this role you'll lead our restaurants, bars, conference & events, and in-room dining operations, setting the standard for service excellence and team culture.

What you'll be doing

• Manage all food and beverage outlets, including threeSixty Restaurant and Bar, Le Petit Chef, The Balcony Bar, in-room dining, and event spaces to ensure seamless guest experience.
• Manage the recruitment, training and development of the F&B team, focusing on specialist positions where required but also ensuring colleagues are confident and cross trained throughout all areas of Food & Beverage.
• Develop and implement innovative wine lists and beverage menus meeting with suppliers regularly and focusing on a support-local and seasonal approach.
• Develop and implement promotional strategies across all areas of food and beverage to drive revenue growth.
• Monitor and control budgets, costs and inventory to maximise profitability.
• Collaborate with the wider hotel leadership team to deliver outstanding guest experiences to achieve hotel targets.
• Lead the team in anticipating guest needs and resolving issues, with a strong focus on learning and improving from feedback.
• Lead the delivery of all conference and event operations, ensuring seamless execution from setup to on the day service and pack-down.

What we're looking for

• Extensive knowledge of all Food and Beverage operations
• Experience as a leader in Food and Beverage for a minimum of 1-3 years
• Hands-on leader with excellent communication skills who inspires and motivates teams.
• Confidence in overseeing both day-to-day service and large-scale event operations.
• Strong financial acumen, including budgeting, cost control and inventory management.
• Demonstrated success in driving revenue growth and profitability.
• Passion for hospitality and a commitment to delivering exceptional guest experiences.
• Flexibility to work rotating shifts during the day, evening, weekends and public holidays
• An LCQ or Managers Certificate will be held in high regard
