About the role:

We need a Sous Chef a cook and a shift manager to join us at our restaurant. This is a fun, high-paced job, ideal for people who like a challenge and want to learn and grow their careers. You should be a team player and be responsible for the culinary and service experience that every customer walks away with.

Role Responsibilities - Sous Chef

  1. Ensure all menus are regularly updated, paying special attention to seasonal availability.
  2. Ensure all menus are costed and priced correctly to obtain the required gross profit.
  3. Ensure all staff are trained to deliver a good portion control and pleasing presentation of all dishes.
  4. Hold regular meetings with the kitchen staff to ensure the smooth running of the kitchen and support them.
  5. Ensure all areas under your control satisfy the most stringent hygiene/ Council Food Control Plan requirements.
  6. Ensure all stocks are ordered to the correct quantities, quality and price.
  7. Ensure all stocks are being kept securely and under the right conditions applicable to each type of commodity stored.
  8. Conduct regular maintenance checks of equipment to reduce breakdowns.
  9. Ensure the kitchen and the surrounding areas are kept tidy at all times.
  10. Ensure the Kitchen roaster is made wisely and expenses are within budget limits.
  11. Regularly update your knowledge and skills for the good of the establishment.
  12. Any other duties the management may reasonably require.

Skills Required (Sous Chef)

  1. A genuine passion for food.
  2. Minimum three years experience in a restaurant kitchen.
  3. Level 5 Cookery qualification - optional
  4. Works quickly and accurately
  5. Strong communication skills.

Role Responsibilities - Cook

  • Preparing ingredients to use in cooking (chopping and peeling vegetables, cutting meat etc.)
  • Cooking food in various utensils or grillers

    Portioning food, placing it on plates, and adding gravies, sauces and garnishes
  • Ensure great presentation by dressing dishes before they are served
  • Clean the kitchen and always ensure high hygiene standards
  • Keep a sanitised and orderly environment in the kitchen

    Ensure all food and other items are stored properly
  • Check quality of ingredients
  • Monitor stock and place orders when there are shortages
  • Follow instructions in cooking and delivering well-prepared meals.
  • Able to move around the kitchen and apt in multi-tasking.
  • Ability to work in a team

Cook Skills Required:

  1. A genuine passion for food.
  2. Minimum three years of relevant experience or level 3 cookery qualification.

  3. Works quickly and accurately.

  4. Strong communication skills.

Shift Manager Role Responsibilities:

We are looking for a suitable candidate for the position of a Shift Manager in our busy restaurant

At Roquette restaurant As a Shift Manager, you will have overall responsibility of the operations in restaurant during the shift.

Working hours and pay rate:


• Minimum 30 hours per week, but you can get more hours depending on your performance.


• Hourly rate $25 to $28 depending on experience.

Major Tasks:


• Ensuring food and dining facilities comply with health regulations and are clean, functional and

of suitable appearance during your working hours

• Lead the team independently and ensure exceptionally high level of customer services

Do proper preparation for advance orders of large quantity food or for specific needs/different

occasions/community functions

• Arrange purchasing as per requirements and dealing with suppliers.


• Take reservations, plan, and organize special functions like social and family functions/parties

taking care of specific needs of the customers.


• Maintaining records of safe stock levels of raw materials to ensure uninterrupted supply in

collaboration with the restaurant manager.


• Keep record of all financial transactions and ensure all records are maintained properly and in an organised manner.


• Ensure cheerful presentation of all staff, greeting of guests and assist them in taking orders
• Maintaining records of stock levels and financial transactions independently during the shift


• Connecting with customers and taking random customer feedback to assess their satisfaction

regarding customer-service and food and use the same for making change in strategy of the business

• Regularly acknowledging great performance on a job well done

• Strategically plan the promotion of business at local level in collaboration with the restaurant manager so that maximum customers can be attracted


• Ensure food safety & occupational health and safety regulations are complied, at an excellent

level.

• Prepare and estimate prices for different types of expenses and ensure liquidity to maintain appropriate cash flow.

All suitable candidates for the Shift manager should have:

• Diploma level qualification in hospitality management ideal but not necessary

• LCQ will be an added advantage.

• At least 6 months any supervisory level experience would be an advantage.

• Clear police record and drug free

• Should be available to work on weekends/evening shifts as per requirement
