Responsibilities
This role involves leading your shift team with effective communication skills and setting a positive example. You will share your passion for food and beverage with our discerning guests, assist with onboarding and training new team members, and strive to maintain the highest quality standards in food and beverage. You will also undertake strict hygiene and safety practices and hold responsibility for your shift's financial performance.
Ensure efficient, friendly, and professional food and beverage service is provided to all guests. Provide for guests and patrons an experience and environment they feel meets their expectations. Familiarise yourself with VIP and regular guests to ensure their requests and needs are met. Maintain control of restaurant service equipment, correctly recording breakages and carrying out regular stock takes. Maintain a weekly cleaning schedule for the restaurant to achieve the highest possible hygiene and cleaning standards. Ensure all mis-en-place is completed prior to guests arriving. Ensure staff are competent in dining menu and wine list knowledge and can maximise sales to guests. Ensure the front-of-house and back-of-house areas are clean and tidy. Ensure guest billing is completed accurately following hotel procedure and that correct charges are posted. Use department procedure manuals as a base for all service procedures training. Properly induct new staff into the team, department, and hotel in the first week of their employment. Ensure that all staff under your control carry out their duties in accordance with the service standards and procedures manuals to meet departmental and hotel service standards and brand standards. Effectively use the results of Guest Book and guest questionnaires to improve product and service delivery. Openly communicate with staff ensuring regular briefings occur and all relevant information is passed onto staff. Delegate duties so all aspects of the shift are covered. Lead by example to maintain good staff morale. Manage staff within performance guidelines outlined in the handbook. Ensure that all staff adhere to the licence conditions held by the premise. Ensure responsible service of alcohol to all guests by staff. Provide efficient, friendly, and professional service to all guests. Take initiative to ensure that interactions with our customers (internal or external) are positive and productive. Establish and take all practicable steps to maintain safe working conditions and practices. Take a positive problem-solving approach with issues and concerns; call the Manager on Duty if difficulties arise. Attend regular meetings with the Restaurant Manager.
