Hermitage - Food and Beverage Manager

As the Food and Beverage Manager you will be responsible for managing and overseeing our Food & Beverage outlets at The Hermitage and Mt Cook Village including the Sir Edmund Hillary Café, Snowline Bar, Alpine Buffet and our signature Panorama Restaurant and Chamois bar & Grill.

This role has varying hours and requires a hands-on management approach where active involvement in the daily operations is expected.

**What will my day look like?**
- Effectively leading the Food & Beverage Outlet Managers across 5 key outlets.
- Responsible for the selection and recruitment of team members across the F&B division, maintaining staffing levels across the division to meet budget requirements as well as forecasted business and all guest needs.
- Preparing budgets and managing the outlets according to forecasts, projections and trends.
- Ensuring revenue opportunities are maximised through the outlets, working with the Food and Beverage Director to manage product offerings and promotions.
- Evaluating systems and procedures to ensure the guest experience is maximised.
- Assisting with the planning and costing of beverage offerings alongside the Food and Beverage Director.
- Supervising and managing any outlet as and when required.
- Work with the Front Office team to maximise reservations and bookings in each of the outlets.
- Providing training and feedback to the F&B teams, working with the HR Manager to ensure all performance management systems are being utilised and implemented.
- Working within the management team to ensure cohesion of service and maintaining effective communication both within the F&B department and across the hotel/lodge departments.
- Manage beverage purchases and budgets within delegated authorities.
- Act as the administrator for the hotel’s POS system, ensuring all products and items are set up and accurately priced. Ensuring all accounting processes are followed and revenue reconciliation is accurately posted.

**What do we need from you?**
- A minimum of 2 years’ experience in a similar role or at a HOD level within Food and Beverage
- An eye for detail and the ability to motivate and lead a team
- Proven record of results within previous customer service roles
- Experience with creating and implementing systems, processes and change management
- Computer literacy in Microsoft office and resvations booking systems
- Strong time management, mentoring/coaching, problem solving abilities
- Excellent communication skills both written and verbal
- A General Managers Certificate or the ability to obtain one
