**Head Baker - Japanese-style Bakery in Auckland**

Founded in 1987, Tokyo Food Company Limited is a successful and widely recognised Japanese Food importer and distributor in New Zealand. Over recent years, Japanese cuisine has seen an increase in popularity worldwide as more and more research highlights the health benefits of the Japanese diet. As a new business venture, we will launch our first authentic Japanese-style bakery in Auckland around September 2024. Therefore, we are seeking a head baker familiar with Japanese-style bread making to serve as our opening staff.

**Job title**

Head Baker, Bakery Project Team, Business Development Department

**Job description**

As an experienced and passionate Head Baker, you will be responsible for a wide range of duties associated with the day-to-day operations of the bakery store we will newly launch, including but not limited to;
**(1)** **Preparation for store opening**
- Assist in selecting the store location of a new bakery shop and the equipment needed to make bread from scratch.
- Assist in the layout design of the store and planning the movement lines within the kitchen area.
- Hire store staff, liaise with HR with recruitment needs, and provide them with necessary training.

**(2)** **Manufacturing of Japanese-style bread**
- Determine target products, create and develop recipes, and periodically review according to market trends
- Checking the quality of raw materials, securing suppliers, and price negotiations
- Maintain inventory of baking supplies and ordering
- Manufacturing Japanese-style bread including fillings for buns and pastries, and maintaining exceptional quality products
- Kneading, maturing, cutting, moulding, mixing and shaping dough and pastry goods
- Monitoring oven temperatures and product appearance to determine baking and proofing times
- Coordinating the forming, loading, baking, unloading, de-panning and cooling of batches of bread, rolls and pastry products
- Recipe development and sales feasibility verification for bagged products containing additives, and for frozen dough and frozen bread after proofing.

**(3)** **Staff Management**
- Liaise with HR Dept to hire sales and manufacturing staff
- Managing work roster for staff
- Training and upskilling the team, succession planning, reviewing performance, mentoring and coaching
- Create business operation and production manuals

**(4)** **Daily Store Management**
- Managing Food Safety standards and checking the cleanliness of equipment and operation of premises before production runs to ensure compliance with occupational health and safety regulations
- Daily baking work (all-scratch Japanese-style bread manufacturing)
- Responsible for all duties associated with daily store operations, such as sales, display, inventory management, sales management, quality control, hygiene management, etc.
- Sales promotion and marketing activities (including updating website and SNS etc)
- Manage the bakery’s budget and achieve both sales and profit targets
- Handle customer complaints and issues

**(5)** **Others**

Such other tasks as requested by the supervisor relate to the efficient running of Tokyo Food Co., Ltd.
- **What is Japanese-style bread?**

A term for Japanese-style bread here refers to milk bread, filled and stuffed buns, and sweet and savoury bread commonly sold in bakeries in Japan. It is characterised by its soft and fluffy texture, which is achieved through a special baking technique, the "sponge-dough method” (called the “_nakadane_” method in Japan) and others. This helps to retain moisture in the bread, resulting in a soft and tender crumb. Japanese-style bread can come in various shapes and flavours, including plain white bread, whole wheat bread, milk bread, pastries or buns filled with ingredients like custard, red bean paste, Japanese curry etc.

$25.00 - $36.50 per hour

**Minimum guaranteed hours of work**

40 hours per week

**Requirements**:

- At least three years of proven experience as a Head Baker or similar role in addition to the formal culinary qualification
