The Opportunity
We are seeking a talented and experienced Head Chef to lead our kitchen team at Cable Bay Vineyards. This is a fantastic opportunity to showcase your culinary creativity while managing the operational aspects of a dynamic kitchen. From designing exceptional menus to maintaining cost efficiency and leading a talented team, this role is ideal for a chef who thrives on both the creative and operational sides of the industry.
We also have an opportunity for the Second-in-Charge.
Examples of What You'll Do
- Overall management of the kitchen team and operations
- Preparing and cooking high-quality dishes using locally sourced, seasonal ingredients.Ensuring food quality from preparation to presentation
- Maintaining the highest standards of food safety and hygiene
- Planning menus and estimating food and labour costs. Design and execute innovative, seasonal menus that showcase fresh, local ingredients and align with our brand value
- Ordering ingredients and supplies
- Collaborating with managers, dietitians, and staff on food prep and on the menu
- Cooking and demonstrating techniques to the team
- Ensure strict adherence to food safety and hygiene standards
- Recruit, train, and mentor a team of skilled chefs, fostering a positive and professional work environment.
- Monitor and manage labour costs, food costs, and waste to meet key performance indicators (KPIs).
What We're Looking For
• Experience: At least 3 years in a Head Chef or Senior Sous Chef role in a high-end, fast-paced environment.
• Culinary Expertise: Proven ability to create exceptional menus and deliver outstanding dishes that delight guests.
• Leadership Skills: A track record of recruiting, training, and leading diverse kitchen teams.
• Operational Skills: Experience managing budgets, labour costs, and inventory with a focus on efficiency and sustainability.
• Adaptability: Ability to thrive in a dynamic, high-volume environment, especially during peak seasons.
• Passion and Vision: A genuine love for food and a drive to create unforgettable dining experiences.
