About us :

New York Grill is a high end steakhouse in the Rooftop Dining precinct in Westfield Newmarket, with easy access to public transport and many other amenities. We are a traditional New York style steakhouse with a modern twist. We provide a calm and friendly oasis for tired mall shoppers and we are also a destination restaurant for our regular customers. We host special occasions, business groups and everyday diners looking for a quality dining experience.

Primary Chef de Partie Function :

To manage the operation and organisation of a section of the kitchen. Maximise quality whilst containing labour costs. Monitoring the quality of dishes during preparation and presentation.

Qualifications & experience :

• At least three years of relevant work experience.

Duties & responsibilities :

• Produce all items related to the menus and functions to the establishment's standard, to satisfy diner expectations.
• Plan and organise work flows, order food items when required.
• Cost recipes and develop menu items for the establishment as requested.
• Keep recipe book up to date.
• Ensure equipment and work environment are operational.
• Ensure prep is up to date for days off.
• Ordering stock and managing par levels daily.
• Impart knowledge and techniques whilst training staff to encourage high standards.
• Explaining and implementing hygiene standards.
• Uphold morale in the kitchen and other departments.
• Communicate with and support staff.
• Assist with the selection and training of new staff.
• Attend kitchen meetings to discuss menu preparation with Managers and FOH Staff.

Position Hours :

Full time permanent, with a minimum of 30 hours per week.
