**Key Responsibilities**:

- Break down whole carcasses into standard retail cuts, trim, slice and prepare meat for customer display
- Create and prepare smallgoods (cured meats, etc.) if required
- Prepare and package products with proper portioning, garnishes, sauces, and labelling
- Regulate and maintain cooking and curing equipment temperatures as needed (if facility includes those processes)
- Store meat and smallgoods in temperature-controlled facilities to ensure safety and quality
- Work to special dietary and customer requests (e.g. trimming for fat, packaging for dietary restrictions)
- Maintain high standards of cleanliness in preparation areas, cutting tools, and display fronts
- Perform stock takes, liaise with suppliers, and ensure fresh deliveries
- Train junior butchery staff or assist apprentices under supervision

**Skills, Experience & Qualifications**:

- Minimum two** years of relevant work experiences**, OR a** Level 4 qualification or above**
- Strong knowledge of food safety, hygiene and workplace safety standards
- Good customer service skills, ability to communicate with team and customers
- Ability to handle sharp tools and equipment safely
- Physically fit for work involving standing, lifting, and repetitive cutting tasks
