The Ohakune Chocolate Eclair Shop is seeking a skilled Senior Baker to join our established team. This full-time role involves preparing and crafting high-quality baked goods in our busy bakehouse. Normal work hours between 2am - 3pm Monday - Sunday. 2 week rotating roster
Permanent role, min 30 hrs per week
Key Responsibilities:
As a Senior Baker, you will:
- Prepare and craft dough, pastries, and baked goods using precise measurements and high-temperature baking techniques.
- Mix and blend ingredients to produce a variety of baked products. Evaluate the quality of raw materials and accurately weigh ingredients for recipes.
- Knead, mature, mix, cut, and shape dough and pastry goods to ensure consistency.
- Prepare and assemble pastry fillings.
- Oversee the workflow of baking batches, including shaping, loading, baking, cooling, and finishing products.
- Glaze buns and pastries, and skilfully decorate cakes with icing, cream, and other toppings.
- Ensure finished goods meet quality standards and production requirements.
- Operate specialized baking equipment, such as dough rollers, moulders, and biscuit cutters.
- Monitor oven temperatures and baked goods during production to achieve optimal results.
- Clean and grease baking trays, tins, and equipment after use to maintain operational readiness.
- Maintain a clean and organised workspace, complying with health and safety protocols.
- Inspect the cleanliness of equipment and ensure the premises meet health and safety standards before starting production.
- Assist in developing and adhering to daily production schedules and recipes.
**Requirements**:
To be successful in this role, you must meet the following criteria:
- Experience: At least 3 years of relevant work experience (which must include experience in working with pastry - choux, flaky and puff) OR a relevant qualification at Level 4 or higher with at least 1 year experience working with pastry - choux, flaky and puff.
- Skills and Attributes:
Required:
- Excellent skills in Choux pastry specifically required
- Strong attention to detail and precision in following recipes.
- Physical stamina to manage early starts (2 a.m.) and a fast-paced workload.
- Basic math skills for measuring and scaling ingredients accurately.
- Ability to walk, bend, and stand for extended periods.
- Availability to work around peak hours, including early mornings, weekends, and holidays.
