Full-Time/ Permanent position

Starting rate $29.66 per hour

Must be able to work Wednesday - Sunday

11am- 11pm

Objective: to manage all operations of the restaurant kitchen. Ensuring ingredients, employees, equipment, and processes are run effectively and efficiently ensuring maximum quality and profitability.
You should represent and embrace all values, visons and directions BOP Brewery and Johney's Dumping's represent.

Key Responsibilities

Operations

-Demonstrating techniques and advising on cooking procedures

Preparing and cooking food
- Ensure the necessary stocks are on hand at the right quality and quantity.
- Ensure all maintenance problems are promptly reported and followed up.
- Ensure all communications between restaurant, bar, floor and kitchen run
smoothly.
- Ensure each dish leaving the kitchen is checked for quality, quantity, presentation and correct temperature.
- Ensure all stocks are being kept securely and under the correct conditions
- Conduct regular maintenance checks of equipment to reduce breakdowns.
- Conduct regular stock checks/stock-takes.
- Regularly update your knowledge and skills for the good of the establishment.
- Resolve problems to the best of your ability
- Prepare and submit in the required format all information necessary for accurate budgeting purposes.
- Optimise raw material usage and minimize food wastage.
- Collaborate with the management team to set pricing strategies that balance profitability and competitiveness.
- Work with suppliers to ensure we receive best ingredients at best price

Employee Management
- Ensure all chefs and kitchen staff are familiar with the day's requirements.
- Provide strong leadership, guidance, and direction to kitchen staff.
- Build and maintain a positive and cohesive team culture.
- Recruit, train, and develop kitchen staff to achieve optimal performance.
- Conduct regular performance evaluations and provide feedback to improve
performance.
- Create and manage weekly staff rosters and monitor hours worked by all
employees
- Ensure all staff are treated fairly and with courtesy.
- Ensure regular on-the-job training is conducted so that subordinate staff perform their duties correctly.
- Ensure all staff are trained to deliver good portion control and pleasing
presentation of all dishes.

- Ensure all areas under your control satisfy the most stringent hygiene
requirements and that staff who are ill or injured receive the correct treatment and are not allowed to work.
- Ensure all staff are correctly dressed to satisfy statutory requirements as well as enhancing the image of the establishment.
- Ensure all statutory, as well as establishment, hygiene regulations are strictly
adhered to.
- Ensure all employees are always correctly and smartly dressed, they offer
professional and courteous service to their customers, and they comply with the required standards.
- Hold regular staff meetings.
- Carry out, or ensure regular on-the-job training is taking place to agreed
standards.

Food Quality and Safety
- Ensure all establishment, hygiene regulations are strictly adhered to.
- Be fully conversant with all regulations and laws regarding food operation. Ensure all food control plans are up to date and all systems regarding food control plan are followed.
- Apply for and renew all food control plans – ensure that they never expire
- Ensure company and statutory hygiene standards are maintained in all areas.
- Ensure all health and safety regulation are followed and enforced
- Carry out, or ensure regular on-the-job training is taking place to agreed NZ food hygiene standards.
- Oversee food purchasing, inventory management, and quality control processes.
- Monitor and maintain high standards of food freshness, taste, and presentation.

Customer Service
- Ensure customers food experience is the best of your ability
- Attend promptly to customer complaints.
- Ensure impeccable service standards and maintain high customer satisfaction.
- Address customer and employee feedback and resolve any complaints related to kitchen operations.
- Foster a culture of exceptional customer service among kitchen staff.

PHYSICAL DEMANDS
While performing the duties of this job, the employee is frequently required to do the following:
Work in hot, high intensity, fast posed environment. While performing the duties of this job the employee is required to stand for long periods of time and walk; use fingers, handle, or feel objects; reach with hands; talk and hear; climb or balance; stoop, kneel, twist, bend and crouch. The employee must occasionally lift or carry up to 25 kg and manipulate and/or move up to 70 kg. Use of arms above the shoulder is sometimes required. Specific vision abilities required by the job include close vision, distance vision, colour vision,
peripheral vision, depth perception, and the ability to adjust focus.Requires manual dexterity and ability to quickly move hand(s), hand with arm, grasp, manipulate or assemble.
